Ballynatray Wild Game & Venison
At Ballynatray we operate our own game processing
facilities. All the game is sourced from
within the Estate and Ballynatray
Demesne. Game birds are supplied from the
Estate Shoot and are
traditionally hung and processed to achieve the
maximum flavour.
Game is available throughout the year, although
when not in season it is frozen. The birds are
available whole as well as breast only packs.
Ballynatray Wild game is sold
to individuals and local restaurants. It is
also available from the Ballymaloe Cookery stall at Midleton market. All sized orders
are catered for and are delivered in our own
refrigerated van.
The venison is traditionally hung for a minimum of
10 days to achieve maximum tenderness and
flavour. All orders can be packaged to meet
the customer’s requirements and can be any
combination or size.
